Southwest Taco Casserole

Are you in a meal prep rut? We sure are. It’s time to mix things up and remind ourselves just how good healthy food can taste! This Southwest Taco Salad is so full of flavor, and it’s packed with all of the essentials to a successful meal: protein, loads of veggies and whole grains. We are in love with this new recipe, and it is seriously making all of our Taco Tuesday dreams come true!

 

Here’s what you’ll need:

1 lb lean ground turkey, browned

1 cup quinoa

1 cup water or broth

2 large New Mexican Chili Pods, finely chopped

1 large red bell pepper, chopped

1 can black beans, drained

1/2 red onion, diced

4 small tomatoes on the vine, chopped

corn of 1 ear of corn

2 Tbs chili powder

2 Tbs cumin

1 Tbs garlic powder

2 tsp salt

Optional: 1/2 cup mozzarella or cheese of choice for topping

 

Directions:

  1. Preheat oven to 350F
  2. Combine all ingredients in a large bowl and mix well
  3. Distribute mixture into a 9×13 inch pan – if you choose to add cheese, sprinkle on top
  4. Bake for 40-45 minutes
