Roasted veggies is one of my go-to meal prep tricks. Roasting any vegetable brings out a deeper, richer flavor – and with these beets, and even brighter color! Beets are a fabulous winter vegetable that, in my opinion, don’t get nearly enough attention. Follow this simple recipe and enjoy them all week long.
Here’s what you’ll need:
6 small beets
1 Tbs coconut oil
1 Tbs raw honey
1 Tbs balsamic vinegar
1/4 tsp salt
- Preheat your oven to 425F
- Peel and slice the beets
- Toss in melted coconut oil, honey, balsamic, and salt
- Place a single layer of the mixture onto a baking sheet lined with parchment paper for easy cleaning
- Bake for about 30 minutes, or until the beets are tender when poked with a fork.
